I've just read that defensive buildings aren't worth investing in.
What do they do for your stats at base level and then while upgraded?

Check out the thread in the Best of the Best Guide, it's still relevant....short answer is build turrets when you don't have anything else to build to fit into 2x2 spaces in your hood, and don't upgrade them.

What does it mean to camp in someone's hood? do people literally simply sit in your hood and wait for your buildings to churn out more cash?

You have to keep visiting another person's hood, but camping in someone's hood, would mean visiting them very often or learning their collection cycle to rob their buildings.

As of late my laundromat has been getting robbed a lot. Especially since I've started upgrading. The only way I could see this being an effective strategy is if the robber is hoping I'll attempt revenge. Is that likely the case?

During the PVP tournament, some people may have scored high points off of you so they robbed your laundromats...I have a $10m/hr income and I probably robbed 50 LMs over the last few days.
