I wholeheartedly agree with the above dudeman, however I fall into none of the three categories necessary to complete the equation lol... Have managed to bang out c.600 so far, and with today off work (I'm GMT so have a full 11 hours to complete the task, no sleep needed lol) 700 is within fairly easy reach - two more sessions of 50 and we're there. Ship it holla!!
I also have 100 stamina but I am an upgraded enforcer, so I gain 1 stam every 2.5 mins. Figured for me to fill up is just below 4 hours. Already have 1700ish attacks while enjoying my 8 hours of sleep a day. If Gree(d) would post leader boards some of us ******might***** consider spending gold.
Finished up 800 just to be sure...lol.

Your math is wrong.
What's an upgraded enforcer? Goodfella? The Goodfella bonuses are not "in addition" to whatever you chose at the start of the game.
Your stamina takes 2:42 to regenerate one, just like any other Goodfella or Enforcer. Or 162 seconds if you prefer. 16200 seconds for a full 100, which equates to 270 minutes or 4 hours 30 minutes.
It will say 2:41, but if you pay attention you will notice that 0:00 gets counted as a full one-second. In order to regenerate stamina at a rate of one per 2:30, you require a 16.6667% faster recovery rate, and there just isn't anything available in the game right now to get that done legit.
So if you've got 2:30 per 1 stamina, either you've got a rare bug that doesn't screw you over, or you're cheating somehow...
Or, you are just not good at math and this 2.5 minutes nonsense was pulled out of somewhere dark and smelly.

Haven't seen one drop and it's past the bell. Course, only tested with 45 bullets.
