How are teams matched against each other?

I'm the leader of a syndicate and was wondering how teams were mached up against each other during war/battles?

You will be matched up with a syndicate of similar (total) attack strength. Your syndicate ranking will be taken into account as well, so you'll most often get matched up with syndicates ranked around you. I think (but am not privileged to that information due to the historical rankings of my syndicate) that the higher your syndicate is in the rankings, the more ranking will play a role in determining match ups.

So it's not like total defense? It's total points of all players?

This, and if you have faced a syndicate in the war already you're less likely to see them again. Though I'm not sure if one factor is weighted more heavily than another.

Attack is what I've heard, but I don't think it will make a big enough difference if all stats are totaled or just attack that it would influence matchups in any meaningful way.

Might be, but last war we faced two syndicates twice (according to one of my members - I wasn't present in the first of both) even though we were only a top 750 team and our range of matchups seemed to indicate a range from about 400 - 2000.

Not sure if you've ever seen the South Park episode where they unveil the writers for Family Guy, but it's similar to that...

We had Fight Club 2, back to back. We also fought a top 750 team. So I think the battles are assigned by a monkee spinning a wheel of fortune.
