Thats a Southern thing. In the North we refer to it as ketchup or HP.
What separates north from south? The people on Corrie call it red sauce & brown sauce.
Thats just so that the Southerners know what they mean I guess. I'm from Manchester. And everyone I know called it ketchup (or some call it tomato sauce) or HP sauce. Mainly, because thats what they are called.
Rather than naming a sauce by its colour.
For example... what would you call gravy? Brown sauce. Then what if you got HP sauce with your Sunday Roast instead? Cos by using the colour method brown sauce is also HP sauce. No. That just wont do. A sauce can not be named after its colour.

Actually... HP sauce is a "brand".
So maybe the correct name for what we are calling HP sauce IS brown sauce!
