when buying or upgrading if you finish the process towards the end with gold will this protect you. Leaving it unavailable to your rivals to target? Also when you attack someone you can see which building you can and cannot attack. How do you find out which ones are protected from attacked at your own base?

I dont know about the gold, as I'm never goingto buy any, but if you select any of your defensive buildings, you will see what buildings (in its range) have a defensive boost. They will not be invincible though.
I dont think using gold on buildings has any advantage. Usually gold items just cant be destroyed, and buildings in general cant be destroyed, they are just robbed.

Buildings that are finished with gold can be raided just like any other buildings.
