I keep filling all my building squares and then I can't see what buildings cost or give me, so here's a handy list (to be updated when I next get a free slot): ;)

Remember these costs don't include the cost of space in your castle...by the time I'd scratched enough gold together to afford a Training Field, I discovered it cost me 500,000 to clear space to build one first! Obviously at that point, it's better to delete low-level buildings such as Fountains and Guard Towers instead...

Expansions:

Every building can be expanded to hold more gold, which means you can go longer between collection times. Each expansion naturally has a cost. You need to determine if the cost(s) are worth it, especially if you'll prolly end up ripping these buildings down and replacing with better buildings. Usually you can place 2 or more new buildings for the cost of a single expansion; you might want to reserve that gold till you put down Training Fields, when the return is finally worth it. :)

Fountain
Level I, max GP = 50
Level II = 75 (costs 200 GP to expand)
Level III =125 (costs 3 gems to expand)

Guard Tower
Level I, max GP = 2000
Level II = 2500 (costs 1500 GP to expand)
Level III = 3300 (costs 5 gems to expand)

Cathedral
Level I, max GP = 500
Level II = 600 (costs 2000 GP to expand)
Level III = 800 (costs 10 gems to expand)

Tavern
Level I, max GP = 1900
Level II = 2300 (costs 10,000 GP to expand)
Level III = 3000 (costs 15 gems to expand)

Crystal Conservatory
Level I, max GP = 400
Level II = 500 (costs 15,000? GP to expand)
Level III = 600 (costs 20 gems to expand)

Dungeon
Level I, max GP = 9000
Level II = 10,500 (costs 20,000 GP to expand)
Level III = 15,000 (costs 30 gems to expand)

Training Field
Level I, max GP = 14,000
Level II = 16,500 (costs 25,000 GP to expand)
Level III = 24,000 (costs 35 gems to expand)

Monster Nest
Level I, max GP = 3200
Level II = 3800 (costs 15,000 GP to expand)
Level III = 5500 (costs 40 gems to expand)

I was wondering who would bother with Monster Nests (100k, makes 800 gp/hr, only holds 3200 gp), when Training Fields offer a better deal at 50k to build, makes 1167 gp/hr, holds 14,000 gp.

Then I found out Training Fields take up more than 1 square. Doh! Assuming each Training Field needs 2 squares, the same 4-square lot could be developed thus:

Training Fields 50k x 2 = 100k initial cost, makes 2,334 gp/hr, can hold up to 28k gp (14k each)
Monster Nests 100k x 4 = 400k initial cost, makes 3200 gp/hr, can hold up to 12,800 gp (3200 each)

Obviously it'll take 8x longer to make back your investment if you go the Monster Nest route, but MNs will net you over 24k extra gold a day (provided you're collecting every 4 hours! ;)) You can make back the initial costs in just over 16 days, and you'll be around, right? 8 MNs will naturally double the hourly/daily yield for the diligent collector.

Of course, for those with lives, children, and day jobs, the Training Ground route might be more your speed. It'll fill every 12 hours.
