On iOS, how can you delete a player you no longer want to use?

You mean so you can start another character on the same device?
If so I suspect you'll need to contact support as your character is bound to the device, I suspect they create some sort of hash to identify you the hash will be created from your device.

If you have 2 devices, you can transfer an account. When you transfer off, the old device is left with a brand new account.
So if you have 2, and want to keep 1 and reset other it works well.
