Is there any way to choose what wall we want to use for that battle, or if there is a way to not use a wall at all during a battle?

No. The game will automatically select your strongest wall for the battle. At the end of the battle, it is gone and the game will use your next strongest for the next battle.

It would be nice to have this option though. In some cases.
