You would expect a professional game company (with morals) to remove a feature with major issues until they fixed it rather than continue to take advantage of a broken mechanic (or to have postponed the release). Usually professional game companies have a test server that they test any new updates on before releasing them. Obviously it's impossible to detect all bugs, but it usually prevents the bigger and more obvious ones from being released.

Not a bad business model, get everyone to pay you for the privilege of being your beta testers, then blame them for being stupid when they point out all the bugs, that apparently aren't bugs, just we're not reading the stats properly......

Well, in house testing would be alpha testing. Often with online games they do alpha testing and then release and going live is the beta test (as usually they catch the bigger bugs in alpha, so any remaining ones are small and quick fixes), unless of course it is a very large update, in which case they may hold open or closed beta tests.
As for GREE though, it doesn't seem as though they do very much testing prior to the release of updates. This seems more true of updates for android than iOS, as Apple are far more dictatorial.
