Should I spend the time/money building and upgrading defensive structures? I spend all day raiding and have attacked buildings that are literally surrounded by tower canons, etc., and have never once failed.
I know they raise your overall defensive stats, but LTQ units give you more bang for the buck vs time/expense of lvlg a tower to 10.
And do they REALLY give defensive boosts to the buildings in their protective circle? I'm just not seeing evidence of that.
Disclaimer: I'm only lvl 58, so maybe this becomes more important in the end-game.

Upgrading towers won't hurt you. It's not exactly smart, but it won't hurt you. So upgrade them.

Do you suffer casualties in these raids, though? What are your highest non indestructible units? Dragons? Hydras? Flaming Catapults?
Next question:
What level buildings are being surrounded by what level types/towers? A level 1 Manor has an in game defense of 30. A level 10 Manor has an in game defense of 300. The Cannon Tower level 1 provides a +22 defense. A level 5? +110 defense.
Do you see where I am going with this?
A level 1 Manor with a level 1 Cannon Tower isn't really upping the "defense value" of the intended target. However, take a level 4 Manor with 120 defense and a few level 10 Cannon Towers around it. Now we're talking. Every single building has in game defense score which increases by its initial starting value each time upgraded.
ex. Level 1 = 10 Level 5 = 50 Level 10 = 100 You get the idea. Now the defense buildings up the defense area by their corresponding values as well. Guard Tower level 1? +2 Shameful.

I'm not seeing a correlation between this statement and your initial inquiry. However, if you have a full indestructible army, you can lose every battle or raid against a stronger player. You won't lose a single unit. Ever. Please explain what your driving at because an LTQ and upgrading a defense building seem miles apart in any relationship.

See above. You won't start to notice until you have upgraded buildings.

All levels will see better results. But, early on, players are focused on IPH and unit buildings. No one truly invests in defense buildings early on, as they just build them and place them, leaving most at level 1 through 3. If that.

I raided one person who had one of their Manors surrounded by cannon towers and the other one was by itself.
I didn't lose any units against the free one but lost 3 against the surrounded one.
So I guess they play a part in the equation.

Excellent info Johnny (with correlation from Zesder), I had NOT looked it from a perspective of losing units. I am going to take a step back and re-examine, tweak my understanding, re-do the math, lol.

I love it when a player has built every defense building - and they're all arranged nicely in one corner far from where I'm turning their manors to rubble. It makes me smile.

Honestly, to the OP, no. Building them, yes, upgrading them before everything else you wish to upgrade, no. They do make a difference as far as casualties go, but outside of the cannon towers you get like two buildings covered. The opportunity cost of increasing your IPH or stats is simply too high, and the deterrence doesn't work because most people don't understand what they do. Even when they do increase casualties it's too late for you, you're already out the money.
I'm not sure what they'd have to change to make them compete over IPH. Maybe % based defense to the area of effect? Or huge huge casualty increases, to the point that even the most ignorant player would notice, but that would just kill raiding, so no. Anything they could do to make them competitive would have an adverse effect on raiding, so I don't expect any changes. Just build them and place as many as you can fit next to your manors, unless you're on my rivals list, in which case you should locate them next to your cottages. Then forget about them.
