Why is my stats inconsistent in pvp?

When I do normal pvp I can see my att stats and my opponents def stats go up and down as I press attack.

My attack stat can go from 48k to 61k, why does this happen?

Same thing happens to me. Mine will range from the the high 6ks to the low 9ks. My profile attack is 8.4k.

Mine often dip a full 25k below my attack stat. I didn't know that was even possible.
