I am being attacked by someone with half the units as me yet his deffence and attack are 1000+ higher than mine? How is this even possible.

Tu put it simply his army is more quality thn urs.
A plyr who has 10 sniper (5/3) will hv more attack stat thn a guy who has 30 scout (1/1)
