Previous Epic Boss were 3 different bosses 1-50, 51-100 and 101-150. There was something with "3" in the name.
Does the name of the current EB "Jolly 5" suggests that it now are 5 different bosses (of 30 levels each)?

Nope.
L31 is stronger than L30 and it is the same boss.
