After some searching I've found the knowledge on the jewelry in the game is pretty basic to non-existant... Is there a collection anywhere showing EP values or maybe even base stats/ values of prefix/suffixes?

I guess nobody really bothered investigating much since level 1 ATK/DEF/HP stats are random/different even for exactly the same ring/amulet...

For ex: level 1 sturdy bauble: 35/38/45/52 DEF
Only boosts seem to have consistent level 1 statistics.

Only thing I once checked (don't quote me, ages ago) is that it is smarter to keep them as baubles than to fuse them if you want to enhance (in other words, there isn't really a "50xp armor"-bling)
